Mary Dickinson & the wooden dolly

It began as a humble bakery on Nottingham Street. But it was Mary Dickinson who turned a local recipe into a legend — hand-raising the pastry around a wooden dolly, then sealing the meat in a clear jelly so the pie would travel and keep.

A century and three-quarters later, we still raise every pie by hand using her methods. The dolly changed shape; the obsession never did.
